Tonight’s dessert

I used to make more dessert items, but our older daughter really has a gift for that, so it has been a while since I did one.

Tonight, though, I wanted to pull one together.

  • 12 dates
  • 1/4 cup of heavy whipping cream
  • 1/2 cup Mascarpone cheese
  • 1.5 to 2 oz of dark or bitter chocolate

Take the dates and slit them down one side, removing the pits and opening them up for later filling.

Then, grate the dark chocolate (i went 72% for this batch) and set into your refrigerator to keep it cold. Be careful, as a dry house and fine metal grater, combined with a well frozen chocolate bar, can make for shards of chocolate literally jumping off the plate!

Next, whip the heavy whipping cream until firm, and mix the Mascarpone into it.

Then fill each pitted date with equal portions of the filling. They will likely seem overly filled, but you want the filling to overflow the seam, when you try to close it.

After that, take the chocolate from the refrigerator and roll the filling side of each date into it, coating the filling.

Keep them chilled until serving, but let them warm to a cool room temp just before delivering them up.
