I awoke this morning with two things on my mind. I had slept in a bit, which gives me a headache, and we had to be on the road by about 8:30, as we had a small family outing planned.
I started to self-medicate for the headache with a strong cup of coffee (I set the machine to make it at 5am, each day, so if I sleep in a bit, it just keeps getting a little stronger while it continued to steam. At least, I tell myself that this should work…so maybe I’m just convincing my system this is the case), to clear my thoughts. After that, I needed something filling to get me going.
A quick survey of the refrigerator turned up the supplies for a breakfast burrito!
- Half a yellow onion, julienned.
- Three Cremini mushrooms, thinly sliced
- Chicken sausage, sliced into thin rounds
- Teaspoon minced garlic
- Two eggs
- Splash of half-and-half – maybe two tablespoons
- Uncooked tortilla
- Smoked cheddar cheese, thin sliced
- Salt and pepper to taste
- Butter
- Salsa, if you want it a bit more … burrito-ish
Saute the onions in one tablespoon of butter, on medium-high, until they start to turn translucent, then add the mushrooms and toss them around until all are fairly coated. Reduce the heat to medium-low, and allow them to keep cooking and caramelizing.
When you reduce the heat on the onions and mushrooms, add the sausage to another pan, on medium-high. Shake them around every now and then, so both sides of each slice get browned a bit. Remember to watch the mushrooms and onions, and shift them around occasionally, so they do not burn.
Tortilla can go on a low heated, cast iron pan, to start to cook.
Whisk the two eggs and half-and-half in a bowl, until well combined.
When the sausage gets browned on both sides, add it to the onions and mushrooms, then butter the pan and pour in the egg mixture. With a spatula, keep the eggs moving around, so no part gets overly cooked. Add salt and pepper, per your taste, as this nears completion.
Around this time, the tortilla is likely ready to flip. As soon as you do this, lay the cheese on one side, and leave in place while the second side of the tortilla cooks and slightly browns. As soon as it is cooked on the underside, slide it onto the plate, lay in the eggs, and top with the sausage, onions, and mushrooms.
Add salsa, if desired, then fold closed and consume, hungrily!

No. I did not use bacon, today! Why, you ask?
I like to cook bacon on a lower temp, for a long time. It renders out more of the bacon grease, leaves it nicely and uniformly done, and can be cooked to truly crispy with better precision. Today, sadly, I did not have enough time to do that.
I will try to not let that happen, again. Really.
